Dražen Vidić

Executive Chef

We believe that cuisine is more than nourishment; it’s a form of art. And Chef Dražen brings that vision to life with every plate he creates. Having first graduated from a school of arts, Chef Dražen later refined his craft at a prestigious private culinary academy, seamlessly blending creativity and technique. For him, cooking and plating are not just skills, but an artistic expression, a delicate balance of aesthetics, flavour, and emotion. A passionate fisherman since childhood, he finds deep inspiration in the sea.

“There’s nothing more rewarding than being part of the whole journey”, he shares. “From catching the fish at dawn, to preparing it with care, only then can you be truly sure of its freshness and quality.”

His career spans decades of experience in renowned restaurants, five-star hotels, and luxury yachts, where he served as Executive Chef, mastering both Mediterranean and international cuisines. Today, Dražen has chosen to return to land, embracing a new chapter as a devoted father and finding joy in spending time with his young daughter. At Palazzo President, he leads a team of culinary professionals, delivering sophisticated Mediterranean dishes with a modern touch, along with global flavours that ensure every guest finds a taste to remember.
